- Brown rice powder - 30g
- Superfine Flour - 200g
- Butter - 125g (Room Temperature)
- Brown Sugar - 70g
- Whole Egg - 100g (Room Temperature)
- Baking Powder - 5g
- Baking Soda - 5g
- Mashed Banana - 155g
- Fresh Milk - 80g
- Vanilla extract - 5g (optional)
Step 1: In a mixing bowl, butter and brown sugar whip until light and fluffy (medium speed), stir in the beaten egg (separate 2-3 times) and mix well.
Step 2: Mash the ripe bananas with a fork until completely smooth. Mix in mashed banana in butter mixture.
Step 3: Sieve superfine flour, brown rice powder, baking soda, and baking powder directly in a bowl.
Step 4: Fold the dry ingredients thoroughly into the wet ingredients. Fold using the cut and fold method.
Step 5: Slowly fold in milk and mix well.
Step 6: Pour into non-stick mould / mould covered with baking paper.
Baking Time: 45min
